In 1990, the Nutrition Clinic was established by Carolyn Hodges Chaffee in Elmira, NY, and was a pioneer in the treatment of Eating Disorders in upstate New York. Serving over 13 counties, the Clinic is recognized regionally and nationally in the treatment of eating disorders. The Nutrition Clinic has been treating and advocating for persons with eating disorders for almost 20 years. The program is a medically-based outpatient clinic committed to helping individuals make permanent, healthy lifestyle changes

In recent years, the length of stays for hospitalization for the treatment of eating disorders has been significantly reduced. This has created a growing gap in services for patients with severe eating disorders who are no longer in the acute or critical phase of their illness. Without further intensive treatment, these patients are often unable to progress to full recovery. Carolyn Hodges Chaffee recognized the need for a partial hospitalization program to lessen this gap in services. As a result, the Sol Stone Center for Eating Disorders, an independent partial hospitalization, was opened in 2004. Sol Stone provides a comprehensive higher level of care for the eating disorder patient.

In 2008, the Nutrition Clinic and Ophelia’s Place developed a relationship to continue to promote awareness, education and provide treatment for individuals suffering from eating disorders. The Nutrition Clinic and Sol Stone opened an Intensive Outpatient Program (IOP) in Liverpool, NY to help meet the needs of individuals in upstate New York. IOP's in Ithaca, NY and Vestal, NY followed in 2010 and 2011 respectively. In recognition of the critical role that transition plays in successful long-term recovery, these programs are designed to meet the patient’s needs along a continuum of care.
